🌮 Chipotle Chicken Tacos

  1. Marinate the chicken:
    Mix chipotle in adobo, garlic, paprika, olive oil, lime juice and zest, salt, and pepper. Coat the chicken well and marinate for at least 15 minutes.
  2. Prep toppings:
    Dice onion and tomato, crumble feta, and portion guacamole so everything is ready to build quickly.
  3. Cook chicken hot and fast:
    Heat a large pan over medium-high heat and cook chicken in batches until caramelised and cooked through. Rest for 2-3 minutes, then chop into taco-size pieces.
  4. Warm tortillas:
    Heat tortillas in a dry pan or directly over flame for a few seconds each side until soft and slightly charred.
  5. Assemble tacos:
    Fill tortillas with chicken, then top with guac, feta, diced onion and tomato. Finish with extra lime if you want more brightness.
