Steak Tacos with Homemade Guac

Method

  1. Marinate the steak:
    Combine the cumin, smoked paprika, chili powder, salt, pepper, olive oil, and half the lime juice. Rub over the steak and rest for 15-30 minutes (or longer in the fridge if you have time).
  2. Make the guac:
    Mash the avocado with a fork to your preferred chunkiness. Stir through the remaining lime juice, diced red onion, tomato, chilli, a little coriander, and salt. Taste and adjust.
  3. Sear the steak:
    Heat a pan or BBQ to high heat. Cook the steak 3-4 minutes each side for medium-rare, adjusting for thickness and preference. Rest for 5-10 minutes before slicing.
  4. Slice against the grain:
    Cut the steak into thin slices for a tender bite.
  5. Warm the tortillas:
    Char lightly in a dry pan or directly over a flame, about 20-30 seconds each side.
  6. Assemble:
    Load the tortillas with sliced steak, a spoonful of guac, diced white onion, and coriander. Finish with a squeeze of lime.
