Rinse rice until the water runs mostly clear to remove excess starch.
Cook as normal, then finish with a pinch of salt and a squeeze of lime juice for brightness.
Fluff and set aside.

Let it sit undisturbed for a few minutes to develop a charred crust before flipping.

Cook the vegetables for texture:
