Seared beef mince with capsicum, garlic and a simple spice blend, stirred through with black beans and corn for a proper burrito-bowl base.

Served over rice with a fresh lettuce, cucumber and tomato salad, and finished with a smoky, creamy chipotle sauce — Greek yoghurt and a little mayo mixed with chipotles in adobo.

Method

  1. Sear the beef mince:
    Heat a large pan over medium-high heat. Add the mince, breaking it apart, and cook until browned. Remove and set aside.
  2. Cook the onion and capsicum:
    In the same pan, cook the diced onion and capsicum until softened, about 4-5 minutes.
  3. Add garlic and spices:
    Stir in the garlic, smoked paprika, cumin, salt and pepper. Cook for 1 minute until fragrant.
  4. Return the mince:
    Add the mince back to the pan along with the black beans and corn. Stir well and cook another 3-4 minutes until heated through and combined.
  5. Cook the rice:
    While the mince cooks, prepare the rice according to packet instructions.
  6. Make the chipotle yoghurt sauce:
    Combine the chopped chipotles in adobo with a little of the adobo sauce, the mayonnaise, and the Greek yoghurt. Mix well and season to taste.
  7. Prep the salad:
    Toss together the shredded lettuce, diced cucumber, and diced tomato.
  8. Assemble the bowls:
    Divide the rice between bowls, top with the beef mince mixture and fresh salad, and finish with a generous drizzle of the chipotle yoghurt sauce.
