  1. Mix the sauce:
    In a bowl, whisk peanut butter, soy sauces, rice vinegar, chilli crisp, honey and hot water until smooth and pourable.
  2. Brown the mince:
    Heat a pan over medium-high heat with a little oil. Cook mince until browned and slightly crispy in places.
  3. Add aromatics:
    Stir through garlic and ginger for 30–60 seconds until fragrant.
  4. Cook the noodles:
    Prepare fresh noodles according to packet directions, then drain.
  5. Combine:
    Add noodles and peanut sauce to the mince. Toss over medium heat until glossy and fully coated. Add a splash of water if needed.
  6. Finish and serve:
    Top with cucumber, spring onion, coriander and lime wedges. Serve hot with extra chilli crisp if you like more heat.
