Chuck or short rib goes in whole, browned hard, then braised low and slow for a few hours until it falls apart. Shredding it back through the sauce at the end gives a much richer, more textured ragù than mince ever gets you.
No milk here — just a proper braise, a rest off the heat, and a pile of pappardelle to serve it over.
