  1. Render the guanciale:
    Cook the guanciale in a cold pan over medium heat (no oil needed) until crispy and golden, about 6-8 minutes. Take the pan off the heat and set aside — keep the rendered fat in the pan.
  2. Make the egg mixture:
    Whisk the egg yolks and whole egg with the Pecorino and a generous amount of black pepper until it forms a thick, well-combined paste.
  3. Cook the pasta:
    Boil the spaghetti in well-salted water until al dente. Reserve a cup of the pasta water before draining.
  4. Toss with the guanciale fat:
    Add the drained pasta to the pan with the guanciale and rendered fat, tossing to coat over very low heat.
  5. Emulsify off the heat (key step):
    Take the pan fully off the heat and let it cool for about 30 seconds so the eggs don't scramble. Add the egg and cheese mixture, tossing quickly and continuously, splashing in reserved pasta water a little at a time until it forms a glossy, creamy sauce that coats the pasta.
  6. Serve immediately:
    Plate straight away with extra Pecorino and a generous crack of black pepper on top.
