Classic Beef Burger

A proper homemade cheeseburger: a thick, well-crusted beef patty seasoned with nothing but salt and pepper, melted cheddar, garlicky aioli, tomato relish and fresh rocket, tomato and red onion, all in a toasted brioche bun.

Good beef doesn't need much. Mince with around 20% fat keeps the patties juicy, and seasoning just before they hit the pan gives the best crust.

Get the pan properly hot and leave the patties alone until they release easily. That dark crust is where all the flavour is.

Method

  1. Shape the patties:
    Divide the mince into 4 and gently shape into patties about 2cm thick and a little wider than your buns. Press a shallow dent into the middle of each with your thumb so they stay flat as they cook. Don't overwork the meat or the burgers will be tough.
  2. Prep the toppings:
    Slice the tomato and red onion, and have the rocket, aioli and relish ready to go.
  3. Toast the buns:
    Place the buns cut-side down in a dry frying pan over medium heat for 1-2 minutes until golden. Set aside.
  4. Cook the patties:
    Season the patties generously on both sides with salt and pepper just before cooking. Heat the oil in a heavy pan or on the BBQ over high heat and cook for 3-4 minutes without moving them, until a dark crust forms. Flip and cook for another 3-4 minutes until cooked through.
  5. Melt the cheese:
    Lay a slice of cheddar on each patty for the last minute of cooking and cover with a lid so it melts.
  6. Build the burgers:
    Spread aioli on the bottom buns and top with rocket, tomato and red onion. Add the cheesy patty, spread relish on the top bun and close it up.
